it has been unseasonably hot here in portland lately, and i don't like to do a lot of cooking in the heat. these are two summer meals reflecting my family's cultures. one is libyan salad (tomatoes, onion, jalapeño, cucumber and lots of olive oil) which is eaten by scooping up the salad with good french bread. and the other is hiyashi chuka which is a japanese cold noodle dish with a light 'dressing' (vinegar, soy sauce, sugar, sesame oil and water) with various toppings. both are very refreshing and take very little effort to make. what are your favorite summer foods? i'm always looking for new ideas.

They look delicious, pez! Besides barbequing, I enjoy cold soups like Gazpacho, a summer salad (with lettuce, strawberries, feta, with balsamic vinegar), mango salsa, and a nice cold Corona I'll post recipes when I get the chance.

Those look yummy Pezmy, especially that Libyan salad.
I like making dips during the summer time. No idea why. LOL! It is a bit sickening how much dip we make. If you are looking for awesome ideas, you should sign up for Pinterest. That site is addicting but has a lot of good cooking/baking ideas.
Oh and I like drinking Sangria & Margaritas in the summer.
Sidenote ... I have always wanted to move to Portland! I have a lot of friends living over there. *jealous*

I know these are not for meals but they would be my favourite drink in summer time. LOL I drink loooads of bubble tea in the summer.

ooooh yum! those are great ideas. i love bbq! and dips! and bubble tea! thanks everyone. i'm waiting on your gazpacho recipe, JRooster. and in the meantime, i'm going to try your chicken cacciatore recipe. kitty! you should visit portland someday. you'd love the food carts we have here. i've been avoiding Pinterest because i know i'll get addicted and spend all my time browsing instead of playing video games...but...sheesh, now you've tempted me. and we have some nice places to have bubbletea, linniewin! i've been meaning to try to make it at home, but i need to find out where to get those big straws. omgitsvee...i am soooo bad at baking. i like baking bread, but pastries are so difficult for me. i'm bad at measuring. lol i'll try posting food pics more often. i'm just really bad at taking photos, and most of what i cook is rather mundane. but oh...i do love food. heh

japanese curry is eaten year-round, but it's particularly tasty in summer. i know it's not quite summer yet, but anything over 80 degrees F in portland feels like summer. i used the boxed curry for this, but we're lucky enough to have a great japanese curry shop in town! i also made some tofu and spinach soup for the heck of it. JRooster...i need that gazpacho recipe ASAP plz! Attachments:

Easy Gazpacho
2-3 plum tomatoes chopped 1 red bell pepper diced 1/2 cucumber diced 1/2 red onion diced 1 clove of garlic minced 2 cups of tomato juice 2 tablespoons of extra virgin olive oil 2 tablespoons of sherry vinegar (you can use white wine vinegar as well) fresh cilantro chopped fresh parsley chopped salt pepper
You simply combine all of the ingredients, mix, and let it chill for an hour or so. The longer it sits, the more flavorful it will be.
You can also take all of the above ingredients and blend it smooth in a food processor.
As far as the parsley, cilantro, salt, pepper quantities, it's really to taste. I happen to love cilantro so I add a little extra. Add a little and try it out as you go.
